If you want to add a second stroke to an object or text in Illustrator then there is a way around it.
1. Create a simple rectangle. Grab the rectangle tool and drag out the shape. Fill it with a colour and stroke.

2. Go to the Appearance palette, click on the stroke and then in the flyout menu click “add second stroke”.

3. Our second stroke will appear in the Appearance palette above the original one. Click and drag it under the original stroke. Now click “align stroke to outside” in the stroke palette.

4. Select the stroke in the Appearance palette, change the colour and increase the stroke weight to make it different from the original. Now our rectangle has two strokes and they are editable in the appearance palette.

Repeat this as many times as you like to get more strokes. Remember to place each new stroke under the last one in the Appearance palette and adjust the stroke weight so that it’s larger. This can be done to any shape or object.
Adding multiple strokes to text
1. This is pretty much the same as with an object but there are a few differences.
2. Type some text and give it a stroke. Then, using the Selection tool, choose the text.

3. Now in the Appearance palette, on the flyout menu, click “add second stroke”. The new stroke will appear on the top of the list. Drag it down under ‘contents’.

4. Now simply change the colour, up the stroke weight. Add as many strokes if you want.
